Have an even coming up and you need a few cakes? You can bake them up to three weeks in advance and freeze them.
*Bake your cake and then allow it to cool for about an hour.
* Wrap the cake in plastic wrap. Make sure it is completely covered. I like to use Glad Press and Seal.
* Then wrap in heavy duty freezer strength foil.
* Place a cake board on top and on bottom to support the cake.
* Then freeze. :)
How do you thaw the cake?
* Take the cake out and remove the foil but not the plastic wrap and sit it on a cake board.
* Thaw at room temperature overnight.
* Decorate as you wish

Mix it up / Cake mix add ins.
Make an ordinary cake mix into a extrodinary cake by stiring in some extras.
* Nuts
* Sprinkles
* Crushed candy bars
* Toasted coconut
* Shredded apple
* Lemon zest
* Instant pudding
* Sour cream
* Pie filling
* Cinnamon
* Apple sauce
* Soda or juice instead of water

Cupcake Tips
One box cake mix makes 24 cupcakes.
Preheat the oven 10 to 15 minutes prior to baking.
Bake cupcakes at 350.
It takes about 21 to 26 minutes for regular-sized cupcakes and about 10 minutes for mini-cupcakes
Bake cupcakes in paper or foil liners.
Use shiny rather than dark pans for baking.
Invest in an oven thermometer and check to make sure your oven is baking at the correct temperature.
Use a toothpick to test for doneness. Insert the toothpick into the center of the cupcake if the toothpick comes out clean, it's done and if cake sticks, bake a little longer.
Cool cupcakes in pan 10 to 15 minutes, then turn out on rack to cool completely.
Cupcakes are best consumed the day they are baked.

Perfect Cupcakes Everytime?
Have you ever made cupcakes that all come out different sizes? Some even overflowed. There is a very simple solution. Use a stand size ice cream scoop to put your batter in the cupcake holders. You will end up with cupcakes the right size everytime.

Line medium muffin cups, 2 1/2x1 1/4 inches, with paper baking cups. Look for cups in festive colors and special designs at your supermarket, party store or paper warehouse.
Fill each cup about half full with batter. Bake 20 to 25 minutes or until a toothpick inserted in the center comes out clean.
If you have only one 12-cup muffin pan, cover and refrigerate the rest of the batter while baking the first batch. Then bake the rest of the batter in the cooled muffin pan, adding 1 or 2 minutes to the bake time.
