Cupcake Filling

Cupcakes are great anytime. Fill them and they become something really special. It is easier than it looks.

Filling Recipe
1/4 cup butter
1/4 cup shortening
2 cups confectioners' sugar
1 pinch salt
3 tablespoons milk
1 teaspoon flavor extract of your choice.


In a large bowl, beat soft butter ( let set at room temp for an hour) and shortening together until smooth. Blend in confectioners' sugar and pinch of salt. Gradually beat in 3 tablespoons milk and 1 teaspoon vanilla. beat until light and fluffy. Fill a ziplock bag with filling and then snip off the end of the bag. Push corner of the bag through the top of the cupcake to fill each cupcake. Then top with icing. If you do not want icing on top fill the cucakes from the bottom.
