Recipes using Bisquick

Impossibly Easy Coconut Pie
1/2 cup Original Bisquick®
mix 2 cups milk
1 cup flaked or shredded coconut
3/4 cup sugar
1/4 cup butter or margarine
1 1/2 teaspoons vanilla
4 eggs

1. Heat oven to 350ºF. Grease 9-inch pie plate. 2. Stir all ingredients until blended. Pour into pie plate. 3. Bake 50 to 55 minutes or until golden brown and knife inserted in the center comes out clean. Cover and refrigerate any remaining pie.


Deluxe Cheeseburger Melt
1 1/3 cups Original Bisquick® mix
1/4 cup water
2 eggs
1 1/2 cups shredded Cheddar cheese (6 ounces)
1 pound ground beef
1 can (10 3/4 ounces) condensed cream of mushroom soup
1 cup Green Giant® frozen mixed vegetables

1. Heat oven to 400ºF. Spray 13x9-inch pan with cooking spray. Stir Bisquick mix, water, eggs and 1 cup of the cheese in medium bowl; spread in pan. 2. Cook beef in 10-inch skillet over medium-high heat 5 to 7 minutes, stirring occasionally, until brown; drain. Stir in soup and vegetables; heat until hot. Spread over batter in pan. 3. Bake 23 to 25 minutes or until edges are light golden brown. Sprinkle with remaining 1/2 cup cheese. Bake 1 to 3 minutes longer or until cheese is melted.


Impossibly Easy Quesadilla Pie
1 can (4.5 ounces) Old El Paso® chopped green chiles, well drained
2 cups shredded Cheddar cheese (8 ounces)
1 teaspoon chopped fresh cilantro
3/4 cup Original Bisquick® mix
1 1/2 cups milk
3 eggs

1. Heat oven to 400ºF. Grease 9-inch pie plate. Sprinkle chilies, cheese and cilantro in pie plate. 2. Stir remaining ingredients until blended. Pour into pie plate. 3. Bake 25 to 30 minutes or until knife inserted in center comes out clean. Cool 5 minutes. Serve with salsa if desired.

I love Bisquick & their recipes. Recently I got a large box of Jiffy baking mix with all new recipes too.
