Leftover Turkey Recipes

Thanksgiving is right around the corner. Soon the question on every one's mind will be.. What am I going to do with all this leftover turkey?

Here are a few recipes to have handy.

Heavenly Turkey Pie

*1/4 C chopped onion
*1TBSP butter or margarine
*2 (10.75 oz) cans condensed cream of chicken soup, undiluted
*3 C cubed cooked turkey
*1 large un-peeled tart apples, cubed
*1/3 cup golden raisins
*1 tsp lemon juice
*1/4 tsp ground nutmeg
*1 (9 inch) pie crust
Directions
1. Melt butter in a pan.2. Sauté onion until translucent.3. Stir in soup.4. Fold in apples, raisins, lemon juice and nutmeg.5. Cook until soup is heated through.6. Pour soup mixture into an ungreased casserole dish.7. Place pie crust over top of soup mixture.8. Press pie crust along the sides to seal.9. Cut 3 slits in the top of pie crust.10. Preheat oven to 425 degrees.11. Bake 40 minutes until crust is golden brown.


Turkey Tetrazzini Recipe
1 (8 ounce) package cooked egg noodles
2 tablespoons butter
1 (6 ounce) can sliced mushrooms
1 teaspoon salt
1/8 teaspoon pepper
2 cups chopped cooked turkey
1 (10.75 ounce) can condensed cream of celery soup
1 cup sour cream
1/2 cup grated Parmesan cheese

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Preheat oven to 375 degrees F (190 degrees C).
Melt butter in a large heavy skillet. Saute mushrooms for 1 minute. Season with salt and pepper, and stir in turkey, condensed soup, and sour cream. Place cooked noodles in a 9x13 inch baking dish. Pour sauce mixture evenly over the top. Sprinkle with Parmesan cheese.
Bake in preheated oven for 20 to 25 minutes, or until sauce is bubbling.

Thanksgiving Leftovers Reinvented


3 tablespoons butter
2 tablespoons all-purpose flour
1 (12 fluid ounce) can evaporated milk
1 cup water
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon onion powder
2 tablespoons butter
1 cup finely crushed herb-seasoned dry bread stuffing mix
1 cup cooked, diced turkey meat
1 cup shredded Cheddar cheese
2 cups leftover mashed potatoes

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
Melt 3 tablespoons butter in a saucepan over low heat. Blend in the flour. Slowly stir in evaporated milk and water, then season with salt, pepper, and onion powder. Stir sauce over low heat for 5 minutes.
In a separate saucepan over low heat, melt 2 tablespoons butter. Blend in the dry stuffing mix. Place the turkey in the prepared baking dish. Pour the sauce over turkey, then sprinkle with Cheddar cheese. Spread mashed potatoes over cheese. Top mashed potatoes with the stuffing mixture.
Bake 45 minutes in the preheated oven.

A good one for leftover Turkey is the Turkey Cranberry Wreath, its delicious and makes a great appetizer. :)
