The best caramel corn recipe ever!

This amazing buttery caramel coated popcorn melts in your mouth and is super addictive. It takes a while to make but it is well worth the wait! For a little something extra add in peanuts or drizzle with chocolate.





This is the original recipe but I have changed to make it even better.






INGREDIENTS


1/2 cup real butter
2 cups brown sugar
1/2 cup corn syrup
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla extract
4 bags buttery microwave popcorn popped and kernels picked out( you can use regular popcorn but it is not as good)





Preheat oven to 250 degrees F (95 degrees C). Place popcorn in a very large bowl.
In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in soda and vanilla. Pour in a thin stream over popcorn, stirring to coat.
Place in two large shallow baking dishes and bake in preheated oven, stirring every 15 minutes, for 1 hour. Remove from oven and pour on to wax paper. Let cool completely before breaking into pieces. DO NOT LET COOL IN PAN! It will stick.

Ok, you have me sold. Don't have enough time to make it tonight (it is a little time consuming), but tomorrow will be a different story! I don't have real butter though... do you think a stick of Blue Bonnet will be ok?

I have not tried using margarine but I think it should be ok. Please let me know what you think.

Awesome popcorn!!
Made it the other day. I used only 2 bags of popcorn and Parkay margarine instead of butter. It was fantastic!
