1 1/4 cups all-purpose flour
1/2 teaspoon salt
1 tablespoon baking powder
4 teaspoons white sugar
1 cup milk
1 tablespoon vanilla
1/2 tablespoon butter, melted
1/2 cup frozen blueberries, thawed
In a large bowl, sift together flour, salt, baking powder and sugar. In a small bowl, beat together egg and milk. Stir milk and egg into flour mixture. Mix in the butter and vanilla then fold in the blueberries. Set aside for 1 hour.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
This recipe is perfect for Sunday after chruch. You can mix up the batter and leave. When you get home it is ready to make into pancakes.
